Tinfoil Dinners
It's the perfect time of year to throw together some tinfoil dinners!
Here are some of my favorite ingredients. Mix and match and add to them to suit your taste:
Veggies Meats
-Diced Potatoes (reds or russets) -Diced Chicken (I usually cook it ahead of time)
-Carrots -Crumbled Hamburger or a Patty (can cook ahead)
-Sweet Peppers -Pre-cooked Meatballs (I like the ones from Costco)
-Mushrooms -Crumbled Bacon
-Onions (green, white, yellow) -Diced Ham
-Broccoli
-Celery
-Radishes
Sauces
-sprinkle spices on veggies and meat, then spoon cream of mushroom or cream of chicken soup
over the whole thing
-Mix 1/2 c barbeque sauce (I like Bull's Eye,) 3/4-1 c sweet and sour sauce (like Kikkoman's,) and about 1/4 c honey mixed and spread over veggies, meat, and optional spices
*I often pre-cook the meat and sometimes even the veggies to speed up the process of cooking them over the fire. Place ingredients on a piece of foil (heavy duty is the best) and fold up the edges to contain all the goodness. Wrap another piece of foil around the whole thing to seal it up and bake in the oven, on the grill, or on some nice hot coals. Mmmmm. I would highly recommend following up with some sticky, yummy s'mores!
