Harrisville - From June 29-July 2, 2015, the Harrisville Utah Stake Youth ages 14-18 and some parents and leaders went on the Harrisville Trek. There was a whirlwind of activity going on for the last 5 months in planning for this trek.  It was no small undertaking to feed a company of 300 trekkers. Just what does it take to feed 300 people chili for a meal?   Chili for 300 calls for 120 pounds of ground beef; 60 large onions, chopped; 6 stalks of celery, chopped; 12-106 oz. cans of stewed tomatoes, 12–106 oz. cans of red kidney beans and 18 large cans of tomato paste. Then, you would need 15 to 20 Dutch ovens for cooking. This covered only one of the 3 evening meals for this group of trekkers. Wow, that was lot of food! What did it take for beef stew? Ninety pounds of meat; 6 gallons of water, 9 quarts diced canned tomatoes; 24 pounds of sliced fresh carrots; 13 pounds of diced celery; 9 pounds of diced onions; 30 pounds of chopped potatoes; and 4 pounds of flour. This only yielded 1 ¼ cups of stew per person.  What about feeding all those hungry young boys?  How many loaves of bread were needed to make sandwiches for 300 people? About 60 loaves of bread! What about a piece of bread with the stew? About 20 loaves of bread to give each person 1 slice with their stew.  And, they had to haul all this food with them!  It was quite the trip.  One the youth will remember for a long time.
