3 or 4 pounds boneless thick-cut country style pork ribs
2 T olive oil
1 t seasoned salt
1/2 large onion, sliced (I like to sauté the onion slices before I put them on the meat)
Optional Home-made Sauce (make this or simply use your favorite brand of BBQ sauce- I like Sweet Baby Ray's)
1 c ketchup
1/4 c Worcestershire sauce
1 t chili powder
2 dashes red pepper sauce
2 c water
Directions:
Preheat oven to 450*. Spread 1 T olive oil on bottom of 9x9 glass baking dish. Place ribs in dish and drizzle more oil over meat, rubbing to spread. Sprinkle seasoned salt lightly on top. Place onions on top of ribs. Bake for 30 minutes at 450*.
As they bake, combine all the sauce ingredients over medium heat. Bring to a boil. After the 30 minutes of baking, pour this sauce over ribs, reserving about 1 cup. Bake at 350* for 60 more minutes, or until the meat is tender. Baste every 15 minutes while cooking.
Transfer ribs to a plate and pour remaining sauce over them. (My family loves these ribs with garlic mashed potatoes.)
