Easy-to-Make Summer Snacks

3-Step Berry Ice Pops

 

You'll Need:

  • ½ cup strawberries
  • ½ cup blackberries
  • ½ cup raspberries
  • ½ cup blueberries
  • ½ cup fruit juice of your choice
  • 1 tablespoon honey or agave nectar (optional)
  • Ice pop molds or small plastic or paper cups
  • Wooden craft sticks (only if using paper cups or if required for your ice pop molds)
  • Blender

 

Instructions:

  1. In a blender, MIX together the fruit (fresh or frozen will work) and a juice of your choosing. For our pops, we stuck with a berry-flavored juice to match the flavor profile of the berries, but feel free to get creative and add another flavor into the mix!
  2. For sweeter pops, ADD a tablespoon of honey or agave nectar to the blender. Skip this step if you want to let the fruits and juice speak for themselves.
  3. POUR your mixture into the ice pop molds or plastic cups. If your molds did not come with plastic sticks or holders, you will need to use the wooden sticks according to the directions on the mold.
  4. If you’re using disposable cups instead of a mold, pour the mixture into the cups and cover each with saran wrap. Cut a small hole in the middle of the wrap to place the wooden stick through (the saran wrap will help to hold stick in place as your pops freeze).
  5. PLACE the pops in the freezer for 3–4 hours, making sure they’re good and frozen before trying to remove them from their molds.

Being the sweets lovers that they are, Santa’s Scout Elves couldn’t wait to share the recipe for this frosty North Pole favorite that easily transforms your family’s favorite gooey treat into a sweet, portable snack! Fans of this favorite cozy campfire treat will love the elves’ warm-weather twist on s’mores that can be enjoyed under the sun!

    You’ll Need:

    • ★ 2 cups vanilla ice cream
    • ★ 1 cup marshmallow creme
    • ★ ¼ cup semi-sweet chocolate chips
    • ★ 10 graham crackers (unbroken)

    Instructions:

    Makes approximately 10 frozen s’mores

     

     

     

     

    1. Get your ice cream out of the freezer, allowing it to SOFTEN slightly.
    2. Once the ice cream is slightly thawed, transfer 2 cups into a large bowl. Gradually add the marshmallow creme, stirring continuously to SWIRL it together with the ice cream. (Helpful hint: If you prefer, you can complete the mixing in batches. Just keep in mind you should have two parts ice cream to one part marshmallow creme.)
    3. ADD the chocolate chips and stir until they are evenly dispersed throughout your marshmallow/ice cream mixture.
    4. BREAK a graham cracker in half and spoon the ice cream mixture on to one half. Use the other half to close your s’more sandwich. (Helpful hint: chocolate lovers can also roll the edges of the s’more sandwich in some additional chocolate chips to coat the outside!)
    5. Once you’ve assembled your s’mores, PLACE them on a baking sheet, making sure to leave space in between each one. Place them in the freezer for several hours to set. You’re now ready to savor the flavor of your dreamy s’mores dessert in all of its frosty, chocolatey glory!
